Recipe Box: Green Chile Burritos

Green Chile Burritos

you’ll need…
2 cups cooked rotisserie chicken, shredded
1 can (14 oz) diced green chilies, drained
1 can (15 oz) refried black beans
8 6-inch flour tortillas
1 cup (8 oz) shredded cheese
let’s get to it...
Mix the chicken and green chilies together in a resealable plastic bag.
Spread the black beans evenly on each of the tortillas. Top each with the chicken mixture and shredded cheese. Roll up tortillas tightly. Stack the burritos in a microwaveable dish with a lid or on a microwaveable plate covered with wax paper or parchment paper.
Microwave on Medium Heat for 2 minutes. Rotate a quarter turn and microwave on High for two minutes or until heated through and cheese is melted. Serve immediately.
Presentation is Everything: Remove from microwave and place two burritos on a plate. Top with a tablespoon of guacamole, a teaspoon of salsa and a pinch of chopped cilantro.
Toaster Oven Variation: Prepare as directed except place rolled burritos on foil lined oven tray. Heat on 400°F or Medium, depending on the oven, for 5 minutes or until the tortillas begin to brown on the top and the cheese is melted.
