Recipe Box: Pumpkin Soup with Cinnamon Apples

for the soup you’ll need…
1 Tbsp. olive oil
1 cup chopped carrot
1/2 cup chopped celery
1/2 cup chopped onion
1 tsp. salt
1 (2 to 3 lbs.) cooking pumpkin or butternut squash, peeled, seeded and cut into 2 in. pieces
6 cups reduced fat, low sodium chicken stock or broth chicken stock, divided
for the apple garnish you’ll need…
2 apples (Granny Smith or Jonathan work best)
2 Tbsp. butter, divided
2 tsp. cinnamon, divided
ground nutmeg to taste
let’s make the soup…
Heat the Farberware 6 qt. Stockpot on medium high for 1 to 2 minutes. Add the olive oil, carrot, celery, onion and salt; cook for 2 to 3 minutes, stirring often.
Add the pumpkin and cook 5 to 7 minutes. Stir occasionally so the pumpkin browns but doesn’t burn.
Pour in 3 cups of the chicken stock or broth and bring to a boil. Reduce heat to medium low; cover and cook for 15 to 20 minutes or until pumpkin is tender. Let cool 15 minutes.
Blend soup in batches in a blender or food processor until smooth. Return to the Farberware 6 qt. Stockpot and add remaining chicken stock or broth; cook on medium low until heated through.
let’s make the apple garnish…
Core and peel the apples; cut into small 1/4-inch pieces.
Melt half of the butter in the Farberware 10-in. Skillet on medium heat. Add half of the cinnamon and half of the apples. Sauté for 2 to 3 minutes or until apples are coated with cinnamon. Apples will still be crisp. Remove from skillet and repeat with remaining butter, cinnamon and apples.
Spoon 3 Tbsp. apples into each bowl. Ladle 1 cup of soup over apples; top with a dash of nutmeg.

Do not fill blender or food processor more than halfway when blending warm or hot soups or sauces. Hold the top of the blender on using a thick towel to catch any soup or sauce that comes out. Pulse the blender or food processor several times before letting it stay on to blend the soup or sauce.
