Recipe Box: Tasty Tostadas
Chicken Tostadas
prep: 5 minutes
cook: about 3 minutes
serves: 4, 2 Tostadas each
2 cups rotisserie chicken, cooked
1 chipotle pepper, finely chopped
8 fried or baked flat corn tortilla shells
1 cup (8 oz) Shredded Cheese
1 cup guacamole
2 cups lettuce
1 cup chopped tomatoes
Mix the chicken and chipotle together in a resealable plastic bag.
Spread the chicken mixture evenly on tortillas; top each with shredded cheese. Place on foil-lined Toaster Oven tray.
Heat in Toaster Oven on 400°F or Medium until cheese melts and chicken is heated through. Remove from oven.
Top each Tostada with guacamole, lettuce and chopped tomatoes. Serve immediately.
Make a Taco Bar: Place chicken mixture, guacamole, lettuce, chopped tomatoes, red and green salsa and pickled or fresh jalapeños in small bowls next to warm tortilla shells. Let everyone make their own taco.
Microwave Variation: Prepare as directed except place the Tostadas on a microwaveable plate. Microwave on Medium High for 1 minute. Rotate a quarter turn and microwave on High for another minute or until cheese melts and chicken is heated through. Serve immediately.
