Plated + Served: Pasta with Shrimp Sauce

This is what you are making for dinner tomorrow night.

This quick and easy dinner idea has only 5 ingredients… and I’ll bet that you have all of them on hand (except for the shrimp, maybe). If you cook the pasta while you make the sauce, dinner will be ready in 30-minutes.

Besides, it’s still Lent and you need a meat-free option for Friday.

Pasta with Shrimp Sauce

Pasta with Shrimp Sauce
prep: 10 minutes
cook: 15 minutes
serves: 4 to 6

you’ll need…
1 lb. pasta
¼ cup extra virgin olive oil (do not use vegetable oil)
1 cup thinly sliced onion
2 cloves garlic, minced
1½ lbs. shrimp (21-25 or 26-30 count), deveined, shells and tails removed
1 can crushed tomatoes
3 tablespoons capers (optional)
salt and pepper to taste

let’s get to it…
Prepare
pasta according to the package directions.
Meanwhile, heat the olive oil in a large skillet over medium heat for 1 minute; add the onions and cook for 5 minutes or until translucent.
Stir in the garlic and sauté for 1 minute.
Add the shrimp and cook for 5 minutes, stirring often. Stir in the crushed tomatoes and cook 2 to 3 minutes longer. Remove from heat and cover.
Drain pasta and place in a large serving bowl on in individual bowls. Spoon sauce evenly over pasta.
Garnish with capers if desired.
