Rejoice! Sweet Potatoes have finally been liberated from the holiday table!

And why not? They are rich with potassium, vitamin C and fiber. And the brilliant orange flesh practically screams “I’m loaded with beta-carotene.” The best part? They’re available year round.

    Sweet potatoes are one of my favorite things. I definitely eat these outside of a holiday, though I love a good sweet potato pie during Thanksgiving. I’m trying to figure out how to “root” them to grow in my garden this summer. Will keep this in mind, especially since chipotle brings about a uniqueness. Thanks for visiting my blog.
