Plated + Served: Turkey Taco Nachos
Very stressful at Mama’s house trying to figure out the brackets as March Madness begins… you did do your brackets, didn’t you?
Look, no one wants to spend as much time getting food on the table during the games as they do fretting over their brackets (let’s see… can Butler really make the Final Four again? Does Valpo stand a chance against Michigan State? What about Oregon?!).
That’s why Mama’s here… with a quick appetizer (or dinner, if you eat enough of ‘em), that you can make as you watch the basketball action unfold.
The best part of these Turkey Taco Nachos is that you can put all the toppings in little bowls on the side so everyone gets a shot to create their own magic.
Which is exactly what Mama’s hoping Louisville will do on Monday, April 8th!
Turkey Taco Nachos

cook: 20 minutes
for the Nachos you’ll need…
6 cups tortilla chips
cooking spray
½ cup chopped onion
1 lb. ground turkey
1 package taco seasoning mix
¼ cup water
2 cups shredded cheddar cheese (or your favorite cheese)
for the Toppings you’ll need (all optional)…
1 cup chopped bell pepper
1 cup sliced pickled jalapeños
1 cup salsa
1 cup sour cream
1 cup chopped tomato
1 cup chopped avocado
1 cup chopped onions
let’s get to it…
Place oven rack in the middle of the oven. Heat oven to 375°F.
Line a baking sheet with foil. Place tortilla chips in a single layer on lined baking sheet; set aside.
Spray a skillet with nonstick cooking spray and heat over medium-high heat. Add onion to skillet and sauté for 3 to 4 minutes or until onion starts to soften. Add turkey, seasoning mix and water; cook 14 to 16 minutes or until meat reaches 165°F. Drain meat, if necessary.
Place toppings in small separate bowls while turkey cooks; set aside.
Spoon cooked ground turkey evenly on top of chips; top with bell pepper and shredded cheese.
Bake 5 to 8 minutes or until cheese is melted (watch carefully!). Remove from oven and serve with toppings on the side.
