Nacho Chicken Drumstick Casserole

On the Twelfth Day of Christmas, the Twelve Drummers Drumming needed only one thing: drumsticks!

Mama obliged with an easy-to-make chicken drumstick casserole. My kids are nacho-fanatics, but everyone likes different toppings. I make the basic casserole and put little bowls of jalapeños, sour cream, lime, chopped onions, cilantro and guacamole on the side so everyone can create their own enchantment.

This is a deliciously easy way to end our celebration of the 12-Days of Christmas!

Churros!

In celebration of the Eleven Pipers Piping, Mama made Mexican Crullers, better known as Churros.

Churros are crispy fried dough fritters sprinkled with cinnamon and sugar. They come in two shapes: thin and coiled in the traditional cruller shape or long and thick “porras” (the Spanish word for baton).

In some parts of Latin America, Churros are filled with guava paste, chocolate, dulce de leche (caramel and sweet cream) and even cheese.

The dough you used to make the Seven Swans-a-Swimming is the same dough used for Churros. To get the crunchy ridges, a pastry bag with a star tip works best, but I’ve also used a Ziploc® Brand Freezer Bag.

Deep-fried and delightfully sweet… these are the perfect way to start the weekend, if you remember portion control!

Only two days left as we continue counting down the 12 Days of Christmas, and today Mama’s here to tell you: The Lords are a-Leaping!

Why? Because of this spicy salsa!

It’s a real eye-opener (especially at breakfast) because it’s made with dried arbol chilies, which have a beautiful deep red color, but are searing hot! Arbol chilies are 2 to 3-inches long with a pointed tip. You can buy them fresh, dried or powdered.

Don’t forget, a little bit of this salsa goes a long way… that’s what keeps the Lords a-leaping!

How about Seven Swans a-swimming in chocolate sauce?

Oh, and they’re filled with little scoops of vanilla ice cream rolled in coconut.

This is the kind of dessert that, when you bring it to the table, everyone is dumbfounded that YOU actually made it.

Honestly, making this recipe isn’t that difficult. The hard part is convincing yourself that the swans don’t have to be perfect.

Come to think of it… as we head into a new year, that’s a pretty good lesson for all of us!
