Over the years, I’ve written a lot about my favorite pepper, which is grown only in southern New Mexico’s fertile Mesilla Valley, where perfect conditions allow the chile to develop an intense earthy flavor.

Hatch Chiles are only available in August and September, so time is running out! Melissa’s Produce is roasting the chiles at select locations around the country. Click here to see if there is a roasting event near you.

I doubled down on the Hatch Chiles in this recipe for Hatch Chile Cornbread Waffles with Watermelon & Hatch Chile Salsa. This savory cornbread waffle is also a great base for meat or fish. I served it with grilled chicken for a twist on traditional Chicken and Waffles.

I wanted gluten-free Hatch Chile Cornbread Waffles, so I used Bob’s Red Mill 1-to-1 Baking Flour, but you can also use regular flour along with the corn meal. I also used fish sauce in the Watermelon and Hatch Chile Salsa to add some umami saltiness, but you can add salt to taste.

Went a little Hatch Chile-wild this weekend… but these delicate Hatch Chile Mini Cornbread Muffins completely explain my madness.

Hatch Chiles are in season NOW, so you need to buy them while you can. Like I said, I went a little crazy and bought 25 lbs. to freeze. GP thought I was nuts… but we’ll see what he says in November when I thaw some of these babies and make his favorite Chili before a big football game.

If you see Hatch Chilies in your supermarket… buy them! Many supermarkets are partnering with Melissa’s Produce and holding roasting events: you buy the chiles and they roast them right there at the store… how easy is that? Mini Jalapeño and Chipotle Cornbread Loaves with Tupelo Honey Butter

There’s a lot to say about this cornbread: tender, spicy, moist, hot… corny.

But one thing you definitely can’t say: boring.

Some friends threw together an honest-to-goodness Texas barbecue last weekend (we’re talking smoked, not grilled, meat). I knew there’d be lots of sweet and spicy BBQ sauce, so I brought cornbread to share (and to mop my plate).

Alright, I’ll admit I kinda cheated because I used Bob’s Red Mill Stone Ground Cornbread Mix instead making it from scratch. But c’mon, I added a lot of love with the fresh jalapeño, corn and chipotle.

I baked and served individual loaves in these Rectangular Mini-Loaf Oven-Safe Paper Baking Pans my pals at Welcome Home Brands sent. I love this collection because the colorful pans add a little pop to the presentation… and I don’t have to clean dirty baking dishes (plus plus plus)! (You can also use a muffin baking pan.)

The best part?  Everyone gets their OWN loaf!
