5 Delicious Dips... perfect for whatever you have on the table: chips, chicken strips, veggies, fruit...

And what does everyone like to dip? Everything.

I’ve come up with 5 Delicious Dips that take minutes to prepare and are perfect for anything you want to submerge in deliciousness. Most are healthy. One is particularly decadent, but c’mon… it’s a dip… not a meal.

Super Easy Chef’s Salad Recipe

I forgot how deliciously rewarding it is to prepare and eat a Chef’s Salad. Here's a Super Easy Chef's Salad Recipe... protein-rich and full of flavor, and looks beautiful on the table, too!   You get your protein. You get your cheese. You get your veggies. You get your crunchy little croutons. You get a healthy, easy-to-make meal that is tied together with a bouncy light vinaigrette.Here's a Super Easy Chef's Salad Recipe... protein-rich and full of flavor, and looks beautiful on the table, too!

Traditionally a Chef’s Salad is made with smoked ox tongue, fresh roasted ham and chicken or turkey cut off the bone and carefully sliced “julienne” style. I’m fine with the ham and chicken or turkey, but the smoked ox tongue is definitely NOT happening in my salad bowl. You go right ahead, and thank you very much.

But what do you do if you don’t have a roasted ham or chicken or turkey hanging out in your refrigerator? You follow my recipe for Super Easy Chef’s Salad. Buy the meat and cheese at the supermarket deli and ask (nicely) for them to cut into ¼-inch thick slices.

You’ll still need to cut the meat and cheese into strips, aka julienne, but that doesn’t take much time. Just stack the slices and cut them all at once. Boiled eggs are easy (and you may already have some in your fridge).

How to Make a Chef's Salad Mama's High StrungYou can use romaine lettuce, but I like to mix it up with iceberg and whatever other leaf lettuce looks good. In this recipe, I used only cucumbers and tomatoes, but you can add whatever veggies you like because, after all, this is a CHEF’S Salad… and you’re the CHEF!

Thai Beef Salad

Use leftover steak to make a delicious Thai Beef Salad - Mama's High Strung

Whenever I make steak, I always make extra so that with the leftovers I can prepare my favorite summer dish: Thai Beef Salad.

The beauty of this salad is that you don’t have to include all of the ingredients. If you don’t have fish sauce, use soy sauce. Don’t like jalapeños… leave them out. You can add what you do have… like red or green peppers, cooked zucchini, broccoli or green beans. This is pretty much a “clean the fridge” type of salad with a whole lot of flavor.

 

 

 

Chilled Dilled Cucumber Gazpacho

Summer soups should be cool and bright, with just enough bite to keep them interesting… kind of like my friends.Chilled Dilled Cucumber Gazpacho

A really good gazpacho is like this, too…full of flavor, but light enough to be refreshing. This is the time of year when we don’t want to have what we eat weighing us down.

What’s gazpacho? Well, it’s usually a chilled, somewhat spicy tomato-based soup from Spain. It’s served with chopped fresh vegetables like cucumbers and onions on the side, so you can add what you like to the soup.

This gazpacho is made with cucumbers (lots of them), grapes and garlic. I use really good extra virgin olive oil and sherry vinegar… both of which are traditionally used in a gazpacho.

Oh, I also added a little bit of dill because I like the way it gently bounces off the cucumbers and grapes. Sprinkle in a little salt, put it all in a blender and you’ve created enchantment again: Chilled Dilled Cucumber Soup.

Cool and bright… with a little bit of bite. Just like you.
