This time of year is crazy hectic, so here’s a breakfast recipe that’ll make your life just a little bit easier (at least for a few mornings).Ham and Cheese Cups - Whip up these on Saturday or Sunday and after they’ve cooled, pop them in a resealable freezer bag so you can reheat when you're in a hurry!

Whip up these Ham and Cheese Cups on Saturday or Sunday and after they’ve cooled, pop them in a resealable plastic freezer bag. Zap them in the microwave to reheat. (Uh…take them out of the bag, first!) Very easy. Very delicious.

Season them with your favorite seasoning salt (Old Bay, Lawry’s, etc.) or dried herb blend. You can fill them with whatever you’ve got on hand: chopped ham, cheese, chorizo or sautéed veggies. The best part: they make a great lunch or snack, too.

You can thank me sometime next week when you’re slammed because the alarm didn’t go off… or that it was your turn to drive morning car pool… or you just don’t feel like cooking!

5 Tips for Perfect Smoothies - Mama's High Strung

Everyone knows how to make a fruit smoothie, right? But do you know how to make the perfect fruit smoothie?

Here’s are my 5 tips for perfect smoothies:

  1. Add the liquids first. This will help blend all the ingredients evenly. Milk, soy milk, almond milk, coconut water, juice, tea and even kombucha or kefir are great base liquids.
  1. Fat is your friend. As much as we want to save calories, using nonfat yogurt is NOT the way to go. It leaves the smoothie tasting like you’ve tried to pulverize sand and it’ll be grainy. Use low-fat yogurt instead.
  1. Use frozen fruit. Frozen fruit thickens and adds flavor without diluting your smoothie. In the off-season, frozen fruit usually has more flavor than what you’ll find in the market. In season, put your fruit in the freezer for a few hours before popping it into the blender. Always pulse the blender a few times because the fruit can refreeze!
  1. For a creamier (and healthier) smoothie, add ripe avocados or bananas. Those darker bananas will be sweeter so don’t worry about a few freckles! Honey, chia and flax seeds are also great thickeners.
  1. Add the ice last. If you still want some icy-coldness, make this the last thing you put in the blender. Ice will thicken the smoothie without adding any additional calories.Hamilton Beach Wave Action Blender

Extra Helpings: The Top 5 Things You Should Always Have in Your Fridge

There are certain things that you should always have in the refrigerator, even if you don’t cook every night… or even every week.

But before you start loading the grocery cart based on what I recommend, think about what you like to eat and how much you cook. Having a few basic items on hand makes the task less stressful.

Stocking the fridge is a little different than stocking the pantry— fridge items expire more quickly. If you don’t drink a lot of milk… don’t buy a gallon. Another item to put on the list? Butter, which adds flavor to everything and can be frozen, especially if you see it on sale.

Here’s the basic list for fridge must-haves. The list is small, but remember you will be opening pantry items that will need to be refrigerated… and you’ll be buying fresh produce and fish and meat:

Why eggs? Because you can eat them at any meal in a variety of ways.
Why milk? Because you’ll use it your cereal, in sauces and in soups.
Why butter? Because fat is flavor and you’ll use it to sauté, in sauces and as a spread.
Why lemons? Because it brightens any dish and is a great topper for vegetables and salads.
Why cheese? The answer is obvious: it’s cheese.

• Frozen Shrimp (buy this when you see it on sale).

If you happen to buy some eclectic item to use in a specific recipe or to gussy up your pu-pu platter when you have a party, find a way to use that item in another recipe. Pizzas and omelets are always exciting when you add deliciously unexpected ingredients.

But remember, this is your fridge, so if you drink juice… buy juice. Gotta have a glass of wine in the evening? Stash a bottle of white in the fridge so it’s nicely chilled and ready to drink while you make dinner!
