Plated + Served: Steak Salad Sandwiches

I’m not a big sandwich eater any more (trying to cut out the bread you know), but sometimes I want something big and hearty, especially as the weather gets cooler.

Steak and salad pair beautifully, so why not marry them in a delicious sandwich slathered with spicy Sriracha mayonnaise?

I used my vinaigrette dressing on the salad, but you can use your favorite. The same goes for the Sriracha mayo: if you don’t have any Sriracha or don’t like it, a simple Dijon mustard also tastes magical.

This sandwich is also a great way to use leftovers. But flank steak cooks so fast on top of the stove or on the grill, it’s a quickie dinner option.

Hmmm… I might have to re-consider my self-imposed bread-ban.

Try This: Shishito Peppers

Here’s the perfect nibble while you’re waiting for the drinks to be poured: Sautéed Japanese shishito peppers.

What makes these grassy, nutty tasting peppers so special is how incredibly simple they are to prepare. Throw them in a skillet with hot (not smoking) olive oil, a squeeze of lemon and some sea salt. Once they’ve blistered and popped, they’re ready.

You also can get all fancy-do and grill them or sauté them in sesame oil with a splash of tamari… but why mess with such an easy-to-make Spanish tapa? Bring the skillet to the table so everyone has the fun of picking them up by the stem and devouring them in one bite.

Find these peppers in Asian markets almost year round or in farmers’ markets right now.

Don’t shy away just because I said “peppers.” Only about 1 in 25 will knock your socks off… which adds to the excitement of eating them! Roulette, anyone?

Mini Jalapeño and Chipotle Cornbread Loaves with Tupelo Honey Butter

There’s a lot to say about this cornbread: tender, spicy, moist, hot… corny.

But one thing you definitely can’t say: boring.

Some friends threw together an honest-to-goodness Texas barbecue last weekend (we’re talking smoked, not grilled, meat). I knew there’d be lots of sweet and spicy BBQ sauce, so I brought cornbread to share (and to mop my plate).

Alright, I’ll admit I kinda cheated because I used Bob’s Red Mill Stone Ground Cornbread Mix instead making it from scratch. But c’mon, I added a lot of love with the fresh jalapeño, corn and chipotle.

I baked and served individual loaves in these Rectangular Mini-Loaf Oven-Safe Paper Baking Pans my pals at Welcome Home Brands sent. I love this collection because the colorful pans add a little pop to the presentation… and I don’t have to clean dirty baking dishes (plus plus plus)! (You can also use a muffin baking pan.)

The best part?  Everyone gets their OWN loaf!
