Well, after 17 years as a journalist, five kids and too many late nights, you’ve got to believe I love coffee. And to drive home the point, here’s a recipe for coffee cake actually MADE with coffee.

And it is amazing.

The coffee and chocolate combo offers a delicious depth of flavor. I also used sour cream in this recipe, which makes for a rich, dense cake, perfect for holding the pecan and brown sugar swirl in the middle.

Even better… this is a totally gluten free recipe, made with Bob’s Red Mill 1-to-1 Baking Flour. I also tested it using All-Purpose flour, so you’ll get the same perfect results with either type of flour.

Hamilton Beach® FlexBrew® 2-Way CoffemakerOne other thing… this recipe calls for a ½ cup of brewed coffee, so I used the Single-Serve side of my Hamilton Beach 2-Way FlexBrew® Coffeemaker. When I was ready to serve the cake, I brewed a large pot of coffee on the Carafe Side. My pals at Hamilton Beach sent me the FlexBrew® Coffeemaker to try out… it’s great being able to make a big old pot of coffee OR a just a cup!

So here’s my recipe for the Best Gluten Free Coffee Cake Ever… made with coffee. Funny how things sometimes come full circle.

This started off as a healthy recipe: spaghetti squash, roasted red pepper and a little garlic.

But then, without warning, it took a luscious turn for the delicious.

Suddenly, it became a rich and decadently creamy dish loaded with flavor: Spaghetti Squash with Alfredo Sauce. I threw in some roasted red peppers for even more WOW.

Okay, so the sauce has a little bit of fat in it. So what?! You’re saving carbs by serving it with the spaghetti squash instead of pasta. And it’s gluten free!

Yep… I’ve always been able to justify all kinds of bad behavior.

My love for sickly-sweet canned cherry pie filling is well-documented. I make no apologies and I’m not ashamed. (And… I am getting help. Really. Not Really.)

I found a can of cherry pie filling in the back of my pantry (how in the world did THAT get there I wonder?)… I immediately thought, “A pie would be nice, but I don’t feel like making one.” Then it hit me… “Hmmm… ice cream! Yes, that’s the enchantment I can create!”

And I did… Cherry Pie ice Cream.

You don’t have to go through the gymnastics (like I did) of making homemade ice cream. Buy a high-quality vanilla bean ice cream, let it soften a bit and stir-in the canned cherry pie filling. I won’t tell. You definitely have to make the streusel because it is so darn delicious. If there’s any leftover, sprinkle it on your oatmeal.

We both know that there are some things in this world that you know aren’t healthy and should be avoided… but then you don’t. Or won’t.

But it’s okay.

As I always say…fat is your friend!  Besides, you don’t eat like this everyday and, well, it’s nice to spoil those you love once in a while.

Especially yourself.

 

Strawberry Pie with Chocolate Crust (and Tutorial!)

This is sweet seduction: Strawberry Pie with Chocolate Crust.

The strawberries you’ll find in markets at this time of the year are different from the strawberries you ate a month ago. Why? Because now they taste like REAL strawberries. Sweet. Succulent. Seductive.

Chocolate and strawberries are a natural combo, so I used chocolate wafer cookies to make the crust. You can also use graham crackers or shortbread if you prefer. I folded the strawberry puree into pillows of whipped egg white so the pie is light and airy. I’ve included a step-by-step tutorial after the main recipe.

Just make sure you buy locally grown strawberries. If the package says the strawberries were picked in another country, put them back and wait a few weeks longer. Fresh strawberries are in season… succumb to the sweet seduction.

 

Tutorial: Deep-Dish Strawberry Pie with Chocolate Crust 

1. Gather your ingredients: 1 package chocolate wafer cookies; 1⅓ cup sugar, divided; ⅓ cup melted butter; 1 lb. strawberries, divided; 1 envelope gelatin; ¾ cup cold water; 1 tablespoon lemon juice; ⅛ teaspoon salt; 2 egg whites

2. Place oven rack in center of oven. Preheat oven to 350°F.

3. Crush cookies and ⅓ cup sugar in a food processor.

4. Transfer crumb mixture to a large bowl and add the melted butter. I don’t add the butter to the food processor because it can get clumpy.

5. Press the crumb mixture into the deep-dish pie pan, including the sides (your crust will be thick). Bake 8 to 10 minutes; remove from oven and set aside to cool.

6. Remove the stems from the strawberries. Place 12 ounces of the strawberries (about ¾ of all the strawberries) and ½ cup sugar into a food processor and purée; set aside.

7. Pour water into a small saucepan and sprinkle on gelatin; soften for 5-minutes.

8. Add remaining ½ cup sugar, lemon juice, and salt to saucepan. Cook on medium heat for 5 to 7 minutes, stirring often, until sugar dissolves (don’t boil!). Pour gelatin mixture into a large mixing bowl and let cool for 15 minutes.

9. Pour strawberry mixture from food processor into cooled gelatin; stir and set aside.

10. Beat egg whites until stiff but not dry.

12. Keep folding until the egg whites are incorporated into the strawberry mixture. It will be liquidy.

13. Pour into baked chocolate piecrust. Use a spatula to remove all the eggs whites from the bowl.

14. Garnish with remaining 4 ounces of strawberries (you can slice them, or just put them on whole).

15. Chill pie for at least 3 hours.
