Very stressful at Mama’s house trying to figure out the brackets as March Madness begins… you did do your brackets, didn’t you?

Taco NachosLook, no one wants to spend as much time getting food on the table during the games as they do fretting over their brackets (let’s see… can Butler really make the Final Four again? Does Valpo stand a chance against Michigan State? What about Oregon?!).

That’s why Mama’s here… with a quick appetizer (or dinner, if you eat enough of ‘em), that you can make as you watch the basketball action unfold.

The best part of these Turkey Taco Nachos is that you can put all the toppings in little bowls on the side so everyone gets a shot to create their own magic.

Which is exactly what Mama’s hoping Louisville will do on Monday, April 8th!

 

 

Nacho Chicken Drumstick Casserole

On the Twelfth Day of Christmas, the Twelve Drummers Drumming needed only one thing: drumsticks!

Mama obliged with an easy-to-make chicken drumstick casserole. My kids are nacho-fanatics, but everyone likes different toppings. I make the basic casserole and put little bowls of jalapeños, sour cream, lime, chopped onions, cilantro and guacamole on the side so everyone can create their own enchantment.

This is a deliciously easy way to end our celebration of the 12-Days of Christmas!
