Mint Chimichurri Mama's High Strunt

Put down that bottle of Mint Jelly… those lamb chops are screaming for something much sexier: Mint Chimichurri.

C’mon, you know what chimichurri is, right? It’s that tangy, garlic-infused parsley-based sauce-like condiment that is a must-have on every table in Argentina. For a split second a few years back, chimichurri was the darling of every chef and on every menu in every restaurant everywhere.

Okay, I’m exaggerating a little. But, I’ve just made standard chimichurri a bit more interesting by substituting fresh mint for the parsley to create an easy to make Mint Chimichurri. The mint brings a sunny, spring-like freshness to this sauce while still keeping the heat. And, yes, it IS gluten-free!

Double this Easy Mint Chimichurri recipe because, once you taste it, you’re going to want to slather it on everything from scrambled eggs, to hamburgers to roasted asparagus!

I tinted the meringue for the Chocolate Almond Meringue Cookies with food coloring and added raspberry flavoring. Cherry, strawberry or even vanilla would pair nicely with the chocolate almond filling.

How to Make Drawn Butter (Tutorial)

Easy. Elegant. Oh, yes, a bit expensive (which makes it extra special!).

King Crab is sweet and delicious, and unless you live in Alaska or further up north, it’s already cooked (and frozen) when you buy it. All you have to do is thaw, reheat and eat!

There are several ways to prepare King Crab, but I like to steam-reheat them in the oven. For a step-by-step tutorial on how to do it, click here.

Because this is a special night, I like to serve them with drawn butter (also called clarified butter). Drawn butter is butter that has been melted with the milk solids removed. You can also season it with herbs or lemon juice if you like. Drawn butter is also great to drizzle onto steamed vegetables.

Here’s a step-by-step tutorial for How To Make Drawn Butter:

Clarified Butter

prep: 5 minutes
cook: 15 minutes

serves 6, 2 tablespoons each

you’ll need… 

½ pound butter

let’s get to it…

1. Melt butter in a heavy saucepan on low heat.

2. Milk solids (in the form of white foam) will cloud the top: DO NOT STIR.

3. When butter is completely melted and small bubbles  begin to form around the edge, turn off heat. Let stand 3 minutes.

4. With a small ladle or spoon, skim off the milk solids.

5. You’ve made drawn butter! Try not to disturb any milk solids remaining on the bottom of the saucepan when you pour it bowls for dipping the crab.

How To Make Candied Pumpkin Seeds - Mama's High StrungAre you making a pumpkin pie from scratch this Thanksgiving? Don’t throw out the best part!

I’m talking about the seeds, of course!

After you wash and cut open the pumpkin, scoop out the pulp and seeds. Place them in a big bowl and then call one of the little kids into the kitchen. Tell them their job is to remove the seeds from the “slime” (use that word, they’ll think it’s cool). Have your helper drop the seeds into a separate bowl.

After the seeds and pulp have been separated, rinse the seeds in a colander and then lay them out on paper towels to air dry. Put them in a re-sealable plastic bag until you’re ready to use them (they’ll hold for about a week).

There are so many ways to roast pumpkin seeds. Here’s my recipe for how to make Candied Pumpkin Seeds, which are great to snack on, top a salad or sprinkle in your oatmeal. They also make sweet little hostess gifts!
