Making Monday’s evening meal meatless is a great way to feel a little less guilty for any weekend over-indulgence.

Baked Quinoa and Carrot fritters- Mama's High Strung

Using what you’ve already got in the fridge makes it a double bonus… it helps you get rid of those leftovers!

I came up with this recipe for Baked Quinoa and Carrot Fritters using leftover quinoa and sautéed carrots. I’ve also made something similar with leftover brown rice. It makes a great vegetarian dinner or a side dish.

And even thought I’ve called these “fritters,” technically they’re not because they’re baked not fried.

Plated + Served: Mini Quinoa Meatballs with Avocado Dipping Sauce

This is one holiday party appetizer you won’t feel guilty about eating… in fact, it’s actually good for you!

You can’t go wrong with quinoa, that sweet, light South American gluten-free grain that’s packed with protein. Mix it with ground turkey, add a light avocado dipping sauce, and you’ve got a delicious and healthy appetizer: Mini Quinoa and Meatballs with Avocado Dipping Sauce.

You can also serve this on top of pasta with your favorite sauce for a great family dinner.

These little guys are so tasty that, even though they’re low in fat and calories, it’s still going to be tough to practice portion control!

Plated + Served: Picnic Quinoa Salad

Here’s a protein-packed salad for your next picnic… especially if you have vegetarians in tow.

This salad not only travels well, it stays fresh in the fridge for a couple of days so you can make it ahead of time. You can also add more veggies to the salad (diced carrots, jalapeños, radishes), depending on what’s in season.

Drew, my little vegetarian, loves this salad… and she always ends up fighting off the carnivores in the family to keep them from devouring it before she gets a chance to dig in!
