When I was a kid, I wouldn’t eat coffee cake because I thought it was made from coffee… (what kid likes coffee?)

Well, after 17 years as a journalist, five kids and too many late nights, you’ve got to believe I love coffee. And to drive home the point, here’s a recipe for coffee cake actually MADE with coffee.

And it is amazing.

The coffee and chocolate combo offers a delicious depth of flavor. I also used sour cream in this recipe, which makes for a rich, dense cake, perfect for holding the pecan and brown sugar swirl in the middle.

Even better… this is a totally gluten free recipe, made with Bob’s Red Mill 1-to-1 Baking Flour. I also tested it using All-Purpose flour, so you’ll get the same perfect results with either type of flour.

Hamilton Beach® FlexBrew® 2-Way CoffemakerOne other thing… this recipe calls for a ½ cup of brewed coffee, so I used the Single-Serve side of my Hamilton Beach 2-Way FlexBrew® Coffeemaker. When I was ready to serve the cake, I brewed a large pot of coffee on the Carafe Side. My pals at Hamilton Beach sent me the FlexBrew® Coffeemaker to try out… it’s great being able to make a big old pot of coffee OR a just a cup!

So here’s my recipe for the Best Gluten Free Coffee Cake Ever… made with coffee. Funny how things sometimes come full circle.


 

How to Make Drawn Butter (Tutorial)

Easy. Elegant. Oh, yes, a bit expensive (which makes it extra special!).

King Crab is sweet and delicious, and unless you live in Alaska or further up north, it’s already cooked (and frozen) when you buy it. All you have to do is thaw, reheat and eat!

There are several ways to prepare King Crab, but I like to steam-reheat them in the oven. For a step-by-step tutorial on how to do it, click here.

Because this is a special night, I like to serve them with drawn butter (also called clarified butter). Drawn butter is butter that has been melted with the milk solids removed. You can also season it with herbs or lemon juice if you like. Drawn butter is also great to drizzle onto steamed vegetables.

Here’s a step-by-step tutorial for How To Make Drawn Butter:

Clarified Butter

prep: 5 minutes
cook: 15 minutes

serves 6, 2 tablespoons each

you’ll need… 

½ pound butter

let’s get to it…

1. Melt butter in a heavy saucepan on low heat.

2. Milk solids (in the form of white foam) will cloud the top: DO NOT STIR.

3. When butter is completely melted and small bubbles  begin to form around the edge, turn off heat. Let stand 3 minutes.

4. With a small ladle or spoon, skim off the milk solids.

5. You’ve made drawn butter! Try not to disturb any milk solids remaining on the bottom of the saucepan when you pour it bowls for dipping the crab.

Have you ever made Homemade Caramel Apples?

I’m not talking about Caramel Apples made with those cute little candy squares that you buy in packages.

I’m talking about REAL honest-to-God Caramel Apples that you make from scratch from REAL HOMEMADE Caramel. This is the Perfect Caramel Apples Recipe.

You absolutely need a candy thermometer for this recipe. A lot of recipes will give you visual cues, but using a thermometer will guarantee that you’ll get it right the first time (yep, I learned the hard way).

If you’re wondering what kind of apples to buy, get what you like to eat out of hand. Honey Crisps are delicious but HUGE! Granny Smiths are tart, but balance out the sweetness of the caramel. Red Delicious are pretty bland, but tend to be uniform in shape.

Decorate the apples or leave them plain… they’ll be delicious no matter what you do!

Slow Cooker Pork Roast with Green Salsa

Roast Pork mama's high strungLife around my house is lived as though someone stepped on the accelerator—going 80 miles an hour, everything and everyone in constant motion (that happens when you have five kids). Lots of running around.

Last month is a good example—getting everyone ready to go back to school is a balancing act… no, a juggling act, beyond compare. Clothes to pack. Doctor appointments. School supplies. Planes to catch. Trains to catch.

And no real time for meals.

So, it’s kind of ironic that my salvation during all this activity isn’t something that moves fast. Just the opposite…it moves slowly. Methodically. It’s my slow cooker…and it’s a life-saver. Uh, make that a time-saver.

My good friends at Hamilton Beach sent me their Set & Forget 6-Quart Programmable Slow Cooker to try out. What do I think? In three words: I. Love. It.

Raw Roast Pork - Mama's High Strung

What’s really great is that I’m able to prep meals the night before… like this Slow Cooker Pork Roast with Green Salsa recipe. First I sliced an onion really thick and put the slices in the bottom of the Slow Cooker’s crock. I rubbed the pork shoulder with spices and set it on top of the onions… and then put the crock in the fridge.

The next morning I added the chicken stock and programmed the Slow Cooker to be ready by the time I got home. The salsa is so easy to prepare, I made it while I got the rest of dinner ready, but you can also prepare it in advance.

Slow Cooker Roast Pork Tacos with Green Salsa - Mama's High Strung

I shredded the pork, stirred in half of the salsa and served it with warm tortillas so everyone could make their own tacos as we all sat down for dinner… and put on the brakes for a little while.

And if you have any salsa leftover, it goes great with eggs the next morning!

One other cool thing is that this slow cooker comes with a temperature probe so that you can cook large cuts of meat, whole chickens or even turkey breasts by relying on the internal food temperature to test for doneness.

Hamilton Beach Set & Forget 6-quart Programmable Slow Cooker with Spoon and Lid

I used the probe to cook a 4-pound chicken on High in about 4 hours (internal temperature 180°F in the chicken’s thigh). The skin didn’t crisp up and brown the way I like it, so I but it in a roasting pan under the broiler for about 5 minutes… beautiful!
